Healthy Breakfast Ideas:

Some healthy and tasty recipes I’ve tried recently – I hope they might inspire you to get baking! I’m also updating my recipe page as I discover new recipes, so keep checking there for other delicious things to make. Please click on the images or headings below to link to the recipe.

Make Ahead Breakfast Cookies

I used barley flour as an alternative to wheat flour. These were easy to make and would be a good portable breakfast idea.
 
Also good for children as an alternative to cereal – they could be served with some organic or goat/sheep/coconut natural yoghurt and some fresh fruit.

Overnight Oats

I made a batch of these overnight oats to eat this week. Aduna make a range of superfoods and have used them to good effect in this delicious recipe.
I didn’t have any Baobab so I used Lucama instead and I left out the cacao nibs. Rude health cashew milk is available from supermarkets but I made my own cashew milk by soaking and blending the nuts in water. I added a little Nuzest chocolate protein powder to this to increase the nutritional value and to add a little extra sweetness. I served mine in a bowl with fresh berries, hemp seeds and desiccated coconut.

Acai Bowl

Acai is a dark purple berry that tastes like a combination of wild berries, chocolate. Acai berries are a rich in antioxidants (like other berries too).

This recipe has a bit too much fruit in my opinion. I advise just half a banana & definitely topping with some seeds & nuts. Also you can use any plant milk but if you soak the nuts in it overnight before making it will give a creamier texture & make the oats more digestible & nutritious. I would also add a scoop of vegan protein powder – Nuzest vanilla should work well. This picture is my daughter’s version – she topped it with some of my home made granola for crunch!
